Leeks and potatoes are very common in Irish cuisine.
This is my favourite soup.Simple,cheap and very tasty
It can be roughly blended or processed until smooth and served with cream and chives.
Server 4-6
-50gr of butter
-1 onion,chopped
-3 leeks,sliced
-250 gr potatoes ,cut into 4 pieces
-850ml of vegetable stock
-50gr Stilton cheese(optional)
Melt the butter in a large saucepan and add the vegetables,sauté for 3-4 minutes until soft.
Pour in the stock and bring to boil,and then reduce the heat and simmer for 15 minutes.
Remove from heat and liquidize the soup.
When using the Stilton,no added salt is necessary.
